Nummies This delicious cookie/bar is a recipe from my friend Delta Guns. I made these today and they are Heavenly! And super simple too!! You can mix it up with different cookie doughs and use cookies instead of the candy in the middle.


Firstly, sashay over to the oven. Be nice to Mister Oven, he is your friend! Then, preheat oven to 350 degrees. Spray each well with a Non-Stick spray, like Pam’s brand.  Smash refrigerated chocolate chip cookie dough into bottom of each well. Place a Reese Peanut Butter Cup, upside down, on top of the cookie dough (or a Oreo). Top with prepared box Brownie mix, filling each well 3/4 full. Bake for 18 minutes. Then enjoy!!!

Coconut Custard Pie

coconut custard pie This recipe is from my Aunt Recye. She was an excellent cook and she was even better at baking. I came upon this recipe that she had written down for me many years ago on an old envelope. I made this pie this morning and boy did it bring back wonderful memories. I hope you will enjoy it as well.


1 3/4 C. Milk

3/4 C. Sugar

1/2 C. Bisquick mix

4 Eggs

Rind of half of an Orange

1/4 C. Butter

1 1/2 Teaspoon Vanilla extract

1 C. Baker’s Coconut, flaked

Combine milk, sugar, bisquick, eggs, orange, butter and vanilla in a medium size mixing bowl. Blend on low-speed for 3 minutes. Pour into a greased and floured 9 inch pie pan. You may use a glass pan or an aluminum disposable pie tin. Let mixture stand for 5 minutes. Sprinkle with coconut. Bake at 350 degrees for 40 minutes.

Serves 8

veggie burgerVeggieburger you say!!!! Yes….they are quite good, even for meat eater like myself. You can add black beans, corn or any other vegetable you like to make this simple burger your own. This recipe has pecans in it so beware if you have nut allergies.


1 1/4 C. Shredded Cheddar cheese

1 Medium Onion, chopped

1 Clove of garlic, small and minced

1 C. Bread crumbs

1 C. Pecans, finely chopped

1 Egg, beaten

2 Tablespoons Chili sauce

1 Teaspoon Dried Basil

Salt and Pepper to taste

Canola oil

6 Hamburger buns

Place all ingredients except oil and buns in a bowl and mix well. Shape into 6 patties. If mixture doesn’t hold together, add a little milk. Pan fry in oil until lightly browned on both sides. Serve on buns with condiment(s) of choice. Serves 6.


Crab Bisque

crab bisqueThe name says it all…..and with its creamy texture, it is a sure-fire winner for the crab lover.


1/4 C. finely diced celery

1/8 C. finely diced onion

3 Tablespoons Butter

3 Tablespoons Flour

4 C. Milk

2 C. Cream

1 Pound White Crabmeat

salt and pepper to taste

Sherry to taste

Saute the celery and onions until tender in the butter. Stir flour into the onions and celery. Slowly add milk, stirring constantly over medium heat until thickened. Stir in cream and crabmeat. Add salt, pepper and sherry. Do not boil. Serves 6 – 8.

Eggs Benedict with Hollandaise Sauce

eggs benedictEggs Benedict with hollandaise sauce sounds so fancy, doesn’t it? Well, don’t let the name fool you! It is very easy to make and elegant to serve, especially for a brunch. Keep it simple, yet delightful has become my motto.


4 slices Canadian bacon


1 Tablespoon butter

2 English Muffins, split

4 Eggs

Fry bacon in oil. Butter muffins and toast them under broiler in the oven. Poach eggs to desired degree of doneness. Place bacon slices on muffins and eggs on bacon. Top with Hollandaise sauce. Serves 4.

Hollandaise sauce:

2 Egg yolks

1 Tablespoon lemon juice

1/2 C. Butter

1/8 Teaspoon Salt

Combine egg yolks, lemon juice and 1/4 cup butter in small saucepan. Cook over low heat, stirring constantly until butter melts. Add remaining butter and salt. Continue cooking, stirring constantly, until additional butter melts and sauce thickens. Serve hot over muffins. Makes 1 cup.

Chocolate-Banana Melts

choc banana sammiesThis is a sweet sammie…..this recipe uses a chocolate-hazelnut spread, such as Nutella, but you may also use plain old peanut butter.


2 Tablespoons Nutella

4 Slices of Soft sandwich bread

1 Banana, sliced

Room temperature Butter

4 Teaspoons Dark Brown Sugar

Divide spread (Nutella) between 2 bread slices. Top with banana slices and remaining bread. Butter sandwich tops. Sprinkle each with 1 teaspoon of brown sugar and press to adhere. Cook sammies sugar side down in a large nonstick skillet over medium- low heat for 2 minutes. Lightly spread butter on untoasted sides of bread; sprinkle each side with another 1 teaspoon of brown sugar. Flip and cook, 2 more minutes. Quarter sandwiches, serve warm. Makes 4.

Maraschino Party Cake

maraschino party cakeThis cake has been around for a very long time and there are many variations as well. I like this recipe because you actually make it from scratch, and it is not that hard to do. We have become accustom to using  box mixes, I do as well, but nothing tastes better than a real old-fashioned home-made cake!


2 C. Cake Flour

2 Teaspoons Baking powder

1/4 Teaspoon salt

1/4 C. Unsalted butter, softened

1 C. White sugar

2 Eggs, beaten

2 Tablespoons Maraschino cherry juice mixed with enough milk to total 2/3 cup.

1 Teaspoon Vanilla extract

1/2 C. Toasted walnuts, chopped

1/2  C. Maraschino cherries, stemmed and chopped


1 C. Unsalted butter, softened

3 C. Confectioners’ sugar

1 Teaspoon Milk

1 Teaspoon Vanilla extract

Extra walnuts for decoration

Heat oven to 350 degrees. Butter an 8 inch round cake pan. For the cake, whisk together flour, baking powder and salt; set aside. Beat together butter and sugar in a large bowl until light and fluffy. Add eggs and mix very well. Add flour alternately with milk and cherry juice mixture. Add vanilla. Beat until thoroughly blended. Stir in walnuts and cherries. Pour into prepared cake pan. Bake until a toothpick, inserted in the center, comes out clean. This is about 1 hour. Let cool 20 minutes.

For frosting, beat butter in a mixing bowl until smooth. Add confectioners’ sugar 1 cup at a time and beat until light and fluffy, 2 minutes. Add the milk and vanilla and stir until combined well. Frost the cake and garnish with walnuts. Then enjoy!
